Jane Kramer on foraging with the chef René Redzepi, whose restaurant, Noma, in Copenhagen, had then been twice named the best in the world. “Foraging is treasure hunting,” he says.
"I wasn't the first throwback on the block," Jane Kramer admits. Wild food foraging has become so fashionable that one blogger called this "the era of the 'I Foraged with René Redzepi Piece.'" In Umbria, she joins a chef who discovered roadside mint ("fantastic with lamb") and learned a "bacon-and-eggs philosophy of little things that work together."
